Preparation time- 15 minutes
Cooking time- 30 minutes
Serves- 7-10 hungry tummies
As we've been having some lovely sunny Days here in England recently, i wanted to make a meal that replicates the weather....Light with a Kick(you know me..its just another excuse to make a yummy Mexican Meal) haha :P
With it's light and soft texture, close your eyes and you really feel like your in Mexico with this delightful dish :)

This is a great & fun recipe for all the family to enjoy making :)

Ingredients-
-2 courgettes (Chopped)
- 1 Lime (Juice)
-1 Tablespoon of Olive Oil
-1/2 a Red Onion (or 1 small Onion) Chopped
-Can of Sweetcorn (I used Fresh or you can use Frozen)
-Cooked Mixed Beans (I used a mix of Black Turtle Beans, Red Kidney Beans, Pinto & Haricot)

-A Handful of Corriander (Chopped)
-Pinch of Chilli Flakes (or you could use a pinch of Smoked Paprika)
- 1/2 a Red & Green Pepper (Roughly Chopped)
-3 Green Jalapeños (you can add more if you would like a real Fiery Kick)
-Salt & Pepper to Season
-Tortilla Wraps (I used BFree Gluten, Wheat, Egg, Dairy Free which you can find in Supermarkets under the Free From Section, i get mine at Asda)
Guacamole-
-1 Avocado
- 1/2 Large Tomato (Roughly Chopped)
-1 Tablespoon of Lime Juice
-1 Small Garlic Clove (Crushed)
-1/2 a Red onion (Finely Chopped)
-Seasoning ( Salt & Pepper)
Lets get our Mexican Hat on...haha
Before we get started on the Mexican Filling, Prepare your Tortilla Cups.
Grab a Tortilla, and cut it into Quarters.
With 2 Triangles,put them together and press into a Muffin Tin ( If you don't have a Muffin tin, thats fine you can use a Ramekin...
Pop them in the oven until Crispy and Golden Brown ( about 5-8 Minutes)
When the Tortillas cups are cooked, remove them from the Oven and place to one side.
Step 1- Prepare you Worktop, and Vegetables.
Step 2- In a Large Wok, add in your Tablespoon of Oil on a low heat.
Step 3- Add in your Chopped Onion and Crushed Garlic, and Sauté for 2-3 Minutes.
Step 4- Once the Onion and Garlic are soft and just turning a nice Golden colour, add in your Chopped Peppers for 2-3 Minutes ( Keep stirring the Mix with a wooden spoon to prevent sticking)
Add a little more Oil if needed.
Step 5- Add in your Roughly Chopped Courgette, Mixed beans, Lime Juice, Jalapenos, Sweetcorn, Coriander and a little Seasoning ( Chilli Flakes, Oregano, Salt & Pepper)
Step 6- Cook on a Low Heat with a Lid on ( This helps the Mix to cook in its own Juices and prevents Sticking and drying out)
Cook for about 10 Minutes, Stirring Occasionally.
Step 7- When the Mix has fully cooked and the Courgette is Soft, take the Lid off and cook for a further 2-3 Minutes.
Step 8- After 3 Minutes, take the Wok of the Heat and Spoon the mix into the Warm, Crispy Tortilla Cups.
This is when you can add Vegan Dairy-free Cheese, a sprinkling of Chia Seeds, extra Coriander dusting of Smoked Paprika or anything you like.
How to make a Juicy, Limy Creamy Guacamole-
Step 1- Cut an Avocado in half and De-stone. Scoop out the inside of the Avocado and Dollop into a Mixing Bowl.
Step 2- With a Fork, mash the avocado till its light and Creamy. it doesn't matter if there are lumps, this gives it more texture.
Step 3- Add in the Chopped Tomato, Lime Juice, crushed Garlic, Onion and Seasoning. Mix together.
I served mine with some Green Salad leaves ( Rocket, Watercress & Spinach)
this meal is lovely for coming up to Summer.
You could also add some Rustic Homemade Potato Wedges.
