Vegan Falafels with homemade Tomato Sauce
Vegan, Dairy-free, Wheat-free, Gluten-free, Yeast-free
Falafel is a Middle Eastern dish where Chickpeas & other Pulses are formed into Balls and Fried. Falafel's are usually eaten with crunchy Salads, Pitta bread or in Wraps.
I decided to create this Falafel recipe, using some of the usual Ingredients, but adding in some extra Spice, Protein and goodness!
I added some Chia Seeds to up the Protein, Omega 3 fatty acids & Fibre content!
(all of these are very important on a Vegan & Vegetarian Diet!)
I also added in my favourite Vegetable......Spinach! omnomnom
Spinach is great in:
-Zinc
-Omega 3
-Iron
-Vitamin C
-Dietary Fibre
-Protein
-Antioxidants
These are just a few of the benefits of this SUPER Vegetable!
This Recipe is quick & simple to make, and is extremily Healthy as the Falafals are shallow Fried as opposed to deep fried.
This Recipe makes around 22, 2inch Falafel's.
Mix until fully combineStep 7- With clean hands, scoop out some of the mixture and form into Balls.
(this is very fun to do!)Step 8- Heat up 2 Tablespoons of Oil in a frying Pan/Wok.
Add in your uncooked Falafel Balls and shallow fry until Golden, making sure you turn them frequently.
This will take around 5 minutes.Now your gorgeous Falafel's are ready to serve along with your delicious homemade Tomato Sauce.

-2 Medium Red Onions (finely chopped)
-2 Teaspoons of Ground Cumin
-Handul of Spinach leaves (washed)
-5 & 1/2 Tablespoons of Light Olive Oil
-1 Tablespoon of chopped Coriander leaves
-400g Can of Chickpeas x2 (drained & washed)
-100g of Wholegrain Oats (I used Gluten-free)
-Dash of Seasoning (Salt & Pepper)
-Dash of Seasoning (Salt & Pepper)
-2 Teaspoons of Chia Seeds-1 Red Chilli (deseeded & chopped)
You can leave in a few seeds for an extra kick!
(or all if you can tolerate the heat...unlike me)

Lets get cooking...
Step 1- Heat 1 & 1/2 Tablespoons of Oil in a Large Frying pan or Wok on a low heat.
Step 3- Stir in the Cumin and mix together. Then add in the Chickpeas, Spinach and Coriander.
Step 5- Whizz up until the ingredients form a mouldable consistency/Paste.Step 6- Once you have your mouldable consistency, place it into a Large Mixing bowl, and add in the Oats, Chia Seeds & seasoning.Mix until fully combineStep 7- With clean hands, scoop out some of the mixture and form into Balls.

-1 Onion (finely chopped)
-1 small Garlic Clove (crushed)
-150ml of Water
-1 Tablespoon of Light Olive Oil
-Preferred Seasoning ( I used 1/2 Teaspoon of A.Vogel Herbamare Spicy)

Step 1- Place 1 Tablespoon of Oil into a Large frying Pan/Wok, gently heat and then add in the Onions and Garlic.
Fry for about 3-4 minutes.
Step 2- Once the Garlic & Onion are Golden, add in the Passatta along with 150ml of Water.
Mix together and season with your cozen Spice/Seasoning.
Step 3- Bring your Sauce to the Boil and leave to simmer for a few minutes, stirring thoroughly.Now your meal is ready to serve! *yay*
Serve up with your Falafal bites and a slice of juicy,fresh Lemon!!!
Lemon really complements this dish and helps to bring all of the mouth-watering, summery flavours together!
