Summer Vegan Nacho's
Vegan, Vegetarian, Wheat-free, Gluten-free, Yeast-free, Egg-free, Guilt-free
Mexican Nachos are the go to snack for summer, especially for BBQ's or Outdoor Family/Friends birthdays or gatherings. I love my Mexican Food, spices & flavours....they're all oh so moorish. I love nibbling on Nacho's watching a good ol' movie.

Ingredients-
-1 Bag of Plain Tortilla Chips (Vegan & Wheat-free)
-A few Jalapeños
-Dairy-free Cheese (I used Cheezley Mozzarella which i got from Goodness.Direct, i'll link it below)

-1 can of Mixed Mexican Beans
-1 can of Mixed Mexican Beans
-Seasoning (Pinch of Salt & Pepper)
-Fresh Corriander to garnish

Lets start off with the Sour Cream-
How to make Vegan Sour Cream-
-1 Pack of Firm Silken Tofu ( I used a 300gram box)
-1 Teaspoon of Sweetner ( I used Agave nectar)
-2 Tablespoons of Extra-Virgin Olive Oil
-1/4 Teaspoon of Salt
-2 Tablespoons of Fresh Squeezed Lemon Juice
Step 1- Pop the Silken Tofu into a Food Processor & blend.
Step 2- Add in all of the other ingredients and whizz up on high until smooth & creamy, add a splash of Lemon Juice to add more zingy taste (optional)

How to make Vegan Guacamole-
-1 ripe Avocado
- 1/2 Large Tomato (Roughly Chopped)
-1 Tablespoon of Lime Juice
-1 Small Garlic Clove (Crushed)
-1/2 a Red onion (Finely Chopped)
-Seasoning ( Salt & Pepper)

How to make Vegan Salsa-
-Handful of Small tomatoes or 1 Large Tomatoe (chopped finely)
-1 Garlic clove (finely chopped)
-1 Red Onion (finely chopped)
-1 1/2 Lime (squeezed)
-1 Tablespoon of chopped fresh Coriander
- 1/4 Teaspoon of Cayenne Pepper
-1/2 Teaspoon of Ground Cumin
-Chia seeds (optional)
-Pinch of Salt & pepper
-1 Garlic clove (finely chopped)
-1 Red Onion (finely chopped)
-1 1/2 Lime (squeezed)
-1 Tablespoon of chopped fresh Coriander
- 1/4 Teaspoon of Cayenne Pepper
-1/2 Teaspoon of Ground Cumin
-Chia seeds (optional)
-Pinch of Salt & pepper

Lets put everything together-
Step 1- On a plate, arrange your Tortilla Chips and start to pile on the delicious toppings.
Step 2- Melt your Cheese by popping it into a non-stick pan & heat gently stirring with a wooden spoon. Watch it Melt & turn gooey) yummy
Pour over the Tortillas
Step 3- In a Pan on Medium Heat, give the Beans a quick rinse, then pour them into the Pan for 3-4 minutes, until softened.
Step 4- Build up the Nacho's by adding on the Beans, Salsa, Guacamole, Sour Cream, Seasoning, Jalapeños and Fresh Coriander Leaves.
Step 5- Serve on a platter or Plate, and enjoy this Mexican FEAST fit for a King!
