Rich Chocolate Bourbon Cupcakes

Vegan, Vegetarian, Dairy-free! 
BOURBONS ARE VEGAN! :D
Bourbons are 2 moorish Chocolate Biscuits sandwiched together with a Chocolate cream filling centre....They are simply Delicious!
These Cupcakes are extra Special as they have a hidden Biscuit in the Cake!
I made these yummy Cupcakes for my Sisters birthday, they went down a real treat. Really nice for any Choco-O-Holic :)

Ingredients-
-1 family pack of Bourbon Buiscuits
-200grams of Plain Flour ( i used Gluten-free)
-200grams of Caster Sugar
-3 1/2 Tablespoons of Cocoa Powder
-A pinch of Salt
-1 Teaspoon of Bicarbonate of Soda
-4 Tablespoons of Vegetable Oil
-1 1/2 Teaspoons of Vanilla Extract
-250ml of Filtered Water

Frosting-
-1 1/2 cup of Icing Sugar
-1/4 Cup of Vegan Butter (Earth Balance or Vitalite)
-1 Teaspoon of Vanilla Extract
-2 Tablespoons of Soya Milk (you can use Vanilla Flavoured)

Lets get Baking.....

Step 1- Get out your Utensils and Ingredients and Pre-heat your Oven to 180 Degrees. 

Step 2- Weigh out your Ingredients and in a Large mixing bowl, Sieve in the Flour, Caster Sugar, Cocoa Powder, Salt and Bicarbonate of Soda. Mix up until smooth.

Step 3- Pour in the the Oil, Vanilla Extract and Water, mix until a dark brown Liquidy Texture. 

Step 4- Line a Cupcake tin with Cases ( i used Muffin cases) and in each Cupcake Case, drop in 1half a Bourbon Biscuit for a little surprise.

Step 5- Start to cover the Bourbon's with the gooey Chocolaty Mixture, and pour in up to 3/4 of the Case.

 I also added in some Buscuit Crumbs and chunks to add texture and extra Bourbon..ness :P

Step 6- When all of the Cases are filled, pop the tray in the Oven for 15-20 Minutes. Make sure you check them after 15 minutes with a Knife or Skewer, it should come out clean, if it doesn't they need a bit more time to cook.

Step 7- Get the Cupcakes out of the oven, they should be springy to the touch!
Leave them to cool on a wire rack for 10 minutes before decorating with the Frosting or the Frosting will melt. 

For the Icing-
Step 1- In a Large mixing bowl, Mix together the Butter, Sugar, Milk and Vanilla. Mix until smooth and creamy and leave to set in the Fridge for at least an hour.

Using a Piping bag, spoon up some of the mixture and place into your piping bag with a large Nossle (depending the look you are going for), then pipe away! 

I went for a Star Tip, and used the Swirl and Cactus looking frosting shape :P

Tuck in and enjoy! 

These cupcakes are very rich, they would be great served with some Dairy-free Icecream...yummmm
