Bitesized Christmas Puddings

Healthy Protein Packed Bitesized Christmas Puddings with a Citrus Coconut Frosting!

The Christmas Pudding Energy Balls look Stunning and i was eager to give them a go!I decided to make the Recipe my own by changing some of the Ingredients and instead of a Cashew Frosting, i opted for a Citrus Coconut Frosting which compliments the nutty flavour of the Pudding Balls.These Bitesized Puddings are Protein Packed as they contain a variety of Nuts, Natural ingredients and Natural Sugars.I am really into my Food Photography at the moment, so these are the perfect little treats to shoot! These would also be a great activity for Kids to make at Christmas time or in the Festive Holidays, as they are appealing, yummy, easy to make and full of goodness!

Ingredients-

Christmas Puddings-
-1 Cup of Dates
1/2 Cup of Raisins
-1/4 Cup of Dried Cranberries
-1 Tablespoon of Orange Zest
-1 Tablespoon of Lemon Zest
(Make sure the Fruit is free from Shellac!)
-1 & 1/2 Teaspoon of Ginger
-1 Teaspoon of Cinnamon
-1 Cup of Flaked Almonds

Coconut Frosting-
-6 Tablespoons of Coconut Oil (Melted)
-2 Tablespoons of Coconut Flour
-3 Tablespoons of Agave Nectar or Maple Syrup
-1 Teaspoon of Vanilla Extract
-1/3 Cup of Almond Milk ( I used Unsweetened)
-1 & 1/2 Tablespoons of Lemon Juice

Lets start off by making the yummy Christmas pudding Balls.
Step 1- Place all of the Ingredients into your Blender or Food Processor and whizz up until fully combined. The Dates help to bind, but if you like you can add some Orange Juice for extra Sweetness  and festive flavour!
Step 2- You know its fully combined when the Ingredients binds together into a Ball.
Step 3- Divide the mixture into little sections and roll between your hands to form a smaller, bitesized Balls.
Pop them into the Fridge whilst we make the Coconut Frosting!!!
Step 1- Add all of the Ingredients into your Blender(at this point it will resemble a Candy Corn colour) , and whizz up until smooth & creamy. Make sure to do a cheeky taste test
Step 2- Pop the Frosting into a Container and place into the Freezer for around an hour to set slightly. 
Step 3- Once chilled, place a small amount ontop of your Pudding Ball to resemble Icing.
Decorate with cut up Dried Cranberries. I also placed a decorative Sugar Snowflake on half the Puddings for an extra Special touch! Serving Suggestions-
-Enjoy with a Hot Drink (Coffee, Tea)
-As a Healthy Snack-Before going to the Gym for Protein & Energy
-Serve along side other nibbles at a Christmas Party/Buffet
