Festive Spice & Apricot Granola!

Festive Spice Breakfast/Snack Granola with chewy Apricot pieces and Protein Packed Walnuts!


What better way to start the day than some Tasty Granola?
Granola is the perfect Breakfast option as you can make it in the comfort of your home, its very easy to make and is extremely delicious, versitile and Nutritious! 
As you may have seen from my recent recipes, i love Gingerbread at the moment. I have mixed Ginger, Nutmeg & Cinnamon (the common Christmassy flavours) in to this Granola and added some Extra goodness with the Walnuts & Apricot.

Dried Apricot is great in Granola as it adds extra flavour goodness and a lovely, chewy texture!

Ingredients-
-50grams of Dairy-free Margarine (I used Soya)
-2 Tablespoons of Maple Syrup
-200grams of Gluten-free Oats
-1 Tablespoon of Nutmeg
-1 Tablespoon of Ground Ginger
-1/4 Teaspoon of Cinnamon
-Handful of Dried Apricot (chopped up)
-10 crushed Walnuts

Step 1- Preheat your oven to 180degrees, Gas mark 4 and line a baking tray with grease proof paper.

Step 2- In a Saucepan, add the Maple Syrup & Margarine into the Pan, and place over a low flame. Stir continuously with a wooden spoon until fully melted.

Step 3- Mix the Oats, Ground Nutmeg, Ground Ginger, Ground Cinnamon, Apricots, Walnuts and 

Step 4- Pour the Butter Mixture into the Dry ingredients and mix thoroughly together. I prefer to do this step with my hands, as this makes sure every single Oat gets covered in the delicious flavour.

Step 5- Spoon the Granola on-to your lined baking tray and pop into the middle of the Oven for 20 minutes.
Check your Granola after 15 minutes, if its not fully done, give it an extra 5-10 minutes.

Step 6- When golden brown and smelling irresistible, carefully remove your Granola from the Oven and place aside to cool before storing in a Container.

The perfect way to enjoy this Granola is with some Dairy-free Yogurt and a pinch of Chia Seeds for Breakfast! You can also enjoy it as a Snack/Breakfast with your Favourite Vegan Milk or to sprinkle on Dairy-free Ice-cream, Fruit, Pancakes....the list goes on and on :)
