Melting Snowman Bakewell bites

Vegan, Dairy-free, Wheat/Gluten-free, Low Sugar
Tasty Bitesized Almond & Cherry Truffles covered in Dairy-free White chocolate.


I couldn't resist creating these adorable Melted Snowmen Truffles which look delightful, taste yummy and are Protein packed! The only problem i have is once they have been created them...they are just far too cute to eat! Oh no!These Truffles are Cherry & Almond Flavoured with the bonus of Protein Powder! They are light and fluffy, with a cakey texture, mouthwatering Chocolate layered ontop with a juicy hidden Cherry. What more could you want?They would be the perfect gesture at a Christmas party, enjoyable for the Kiddies to make & get creative with during the holidays and a scrumptious guilt-free(ish) treat! These Truffles are very simple to make, perfect for the whole family to get involved in!
(If i can make these....honestly anyone can) 

Ingredients-
-1/2 Cup of Ground Almonds
-1 Tablespoon of Coconut Flour
-2 & 1/2 Tablespoons of Almond milk
-2 Tablespoons of Almond Butter
-1/4 Cup of Soya Protein Powder
-Glace & Fresh Cherries
-White & Dark Chocolate

Step 1- Combine the Ground Almonds, Flour, Almond butter, Protein Powder and Almond Milk into a large mixing bowl. With clean hands, firmly kneed together until a dough forms.(if your dough is too crumbly, just add a little more Almond Milk until it comes together)Step 2- Once you have your Ball of Dough, form into smaller balls. Place 1 Glace or Real Cherry in the centre by pushing it firmly in and gathering dough around it until the cherry is fully covered, and have you a nice, round Truffle.Step 3- Place the Truffles into the Fridge whilst you melt the gooey Chocolate!

Step 4- Create a Banmarie, and start to melt your White Chocolate. When the Chocolate has fully melted, cover each Ball in Chocolate and place onto Grease Proof Paper. Once the Ball is on the Paper, add Chocolate to the front of the Truffle making sure its attached to the Truffle to create a melted effect! Do this for all of the Truffles.(as you can see, they look like the Ghost Emoji, they will be snowman...i promise)

Step 5- Once all the Truffles are coated, pop them into the freezer for around 20 minutes to fully set.
How to decorate-
Step 1- Create a Banmarie and melt your Dark Chocolate. 
On Grease proof paper, carefully drizzle Chocolate to create the Snowmens Arms and buttons. Pop into the Freezer for 10 minutes then apply to the Truffles!

Decorate your Snowman and add Squeezey icing for finishing touches (e.g. Scarf, Ear Muffs, Nose etc)

Keep these delightful little guys in the Fridge until ready to serve or the Chocolate will actually melt :P nooo
