Healthy Banana Pancakes with a Sugar-free Chocolate Sauce
Vegan, Dairy-free, Egg-free, Wheat-free, Gluten-free, Guilt-free
Pancakes are very versatile hence why they are extremely popular all around the world! They can be enjoyed as a Dessert with Lemon & Sugar or as a Breakfast with Fresh Fruit. You can even enjoy them for Lunch or as a tasty snack!You can enjoy them sweet or savoury.
I decided to make these Healthy Banana Pancakes with a homemade Chocolate Sauce because i wanted to make a healthy recipe which tastes indulgent but is actually very good for you and it only includes 3 ingredients!!!!!
These Pancakes include Flax Seed, which acts as an Egg replacer to bind the Ingredients but Flaxseed is also very high in Protein, Fibre and Omega-3.The Pancakes are simple to make and taste yummy.I made my own homemade Chocolate Sauce which only includes natural occurring Sugars from the Dates. I used cacao Powder to flavour my Sauce and it also gives a rich & dark chocolaty flavour! Great for drizzling over the delicious Pancakes! You could even pour it over your favourite dessert!Cacao also has great health benefits, i will link the post below-

Ingredients-
-2 Large (ready to eat) Bananas
-1 1/2 Cups of Plain Gluten-free Flour
-2 Tablespoons of Flaxseed with 6 Tablespoons of Water
-1/4 Teaspoon of Ground Cinnamon
-1 Teaspoon of Vanilla Extract
-1 Cup unsweetened Almond Milk
-Dash of Salt
-1 Tablespoon of Maple Syrup
Lets get cooking.....
Step 1- Make your Flax-Egg.Stir the Ground Flaxseed & Water in a small bowl and leave to sit/thicken for around 5 minutes.
Step 2- In a Large mixing bowl, combine the Flour, Cinnamon and Salt and put aside whilst you make the Wet mixture.
Step 3- Mash the Bananas and add in the Almond Milk, Vanilla Extract & Maple Syrup and using a Hand Mixer, whisk together until smooth. Add in the Flax Egg.
Step 4- Pour the wet mixture into the dry Mixture and Whisk together until fully combined.
Step 5- Heat a Frying Pan and grease with Light Olive Oil. Carefully spoon your mixture onto the centre of the hot pan approximatly 1/2cm thick.Once the Pancake starts to cook, using a Spatular...flip the Pancake and continue to cook. It takes around 2-4 minutes on each side, before its ready to serve.
Step 6- Repeat until you have used up all the Batter. Serve with either Maple syrup, Fruit or some delightful homemade Chocolate Sauce.
To make the Chocolate Sauce-
Ingredients-
-1/2 Cup of Dates
-1/2 Cup of unsweetened Almond Milk
-2 Teaspoons of Cacao Powder
Step 1- Make sure your dates are de-stoned.Then place them into a Food Blender along with the Almond Milk.
Step 2- Once blended place into a saucepan and heat until the mixture begins to bubble.You need to keep stirring so the mixture doesn't burn or stick to the pan.
Step 3- Simmer the mixture for about five minutes,and keep stirring, you can add more almond milk if you prefer the chocolate sauce to be more liquid and pourable.
Step 4- Take off the heat and stir in your cacao powder. This makes the rich chocolatey sauce.Ready now to pour/drizzle over your delicious banana pancakes.I also served my pancakes with some orange zest for and added citrus kick,more chopped banana and chopped strawberries, deee licious :)
