Quick & easy classic vegan waffles recipe

Vegan, gluten-free, wheat-free

I've seen so many photos on social media of waffles and it made me want to make some for myself.
I love waffles, especially topped with maple syrup and nuts..yum!

I have come up with these quick & easy waffles which are the classic style and of course vegan!
Waffles are perfect for breakfast topped with fruit and yoghurt, and can also be enjoyed as an indulgent dessert with 'Nutella', chocolate, ice-cream, whipped cream etc.

These waffles are utterly delicious. You're going to love them!
I served my waffles with a variety of different toppings.
1. Banana & coconut (coconut cream, with chopped banana and desiccated coconut)
2. Berries & cream (fresh berries, drizzle of maple syrup and a scoop of dairy-free vanilla ice cream)
3. Biscoff cookie (A swirl of Biscoff cookie spread topped with gluten-free cookie crumbles)
4. 'Nutella' (Vegan chocolate sauce, with dairy-free chocolate ice cream, whole hazelnuts and Ombar chocolate).

These are just a few ideas how you can enjoy these waffles with, the more creative...the better! 
Try serving them up savoury style too! 

Preparation- 5 minutes
Baking time- 3-5 minutes
Makes- 4-5 waffles
Level- Easy

Ingredients for the waffles
-2 tablespoons of ground flax seed
-4 tablespoons of water
-1 teaspoon of apple cider vinegar
-400ml of dairy-free milk (I use almond milk)
-220g of gluten-free plain flour
-90g of golden caster sugar (You can use coconut sugar)
-1/2 teaspoon of bicarbonate of soda
-1 teaspoon of baking powder

To make the waffles
Step 1- In a small bowl, combine the ground flax seed with water, stir and set aside to thicken.
This creates a flax 'egg'.

Step 2- In another small bowl, combine the apple cider vinegar and dairy-free milk and set aside.

Step 3- In a large mixing bowl, combine the flour, sugar, bicarbonate of soda, baking powder.

Step 4- Pour the flax egg into the milk & vinegar mixture and stir well.

Step 5- Pour the wet ingredients into the dry and mix until a smooth batter.

Step 6- Carefully heat up your waffle iron and grease with oil, an oil spray or vegan butter.

Step 7- Pour around 3 tablespoons worth of batter onto your waffle iron and cook until golden brown.
Repeat for all of the batter until you have a stack of yummy waffles.

Keep warm under a tea towel while you make the other waffles.
