5 minute protein breakfast waffles recipe

Waffles for breakfast? I'm in!
There's nothing like waking up, hopping out of bed and making a quick & easy breakfast which is tasty and full of flavour.

My usual breakfast option is pancakes, but for a change, I decided to switch things up and make some waffles, but not any old waffles...chocolate waffles with a caramel coconut sauce!
These waffles also contain a hint of Marmite. I know what you'll be thinking- 'Marmite in waffles'? I was a little apprehensive at first but, oh my goodness.....they're amazing!
The hint of salty marmite along with the sweet caramel sauce and fruit is one of the best combinations I've tried! It's delicious.
These are just a few ideas how you can enjoy these waffles with, the more creative...the better! 
I served up my waffles with a drizzle of coconut caramel sauce, chopped banana, almonds, coconut cream and a sprinkling of chia seeds.
Try serving them up savoury style too! 
You'll want to try these out, I promise!

Preparation- 5 minutes
Baking time- 3-5 minutes
Makes- 4-5 waffles

Ingredients for the waffles
-2 tablespoons of ground flax seed
-4 tablespoons of water
-1 teaspoon of apple cider vinegar
-400ml of dairy-free milk (I use unsweetened almond milk)
-220g of gluten-free plain flour
-2 tablespoons of cacao/cocoa powder
-90g of golden caster sugar (You can use coconut sugar)
-1/2 teaspoon of bicarbonate of soda
-1 teaspoon of baking powder
-1/4 teaspoon of Marmite

Step 1- In a small bowl, combine the ground flax seed with water, stir and set aside to thicken.
This creates a flax 'egg'.

Step 2- In another small bowl, combine the apple cider vinegar and dairy-free milk and set aside.

Step 3- In a large mixing bowl, combine the flour, cacao/cocoa powder, sugar, bicarbonate of soda, baking powder.

Step 4- Pour the flax egg into the milk & vinegar mixture and stir well.

Step 5- Pour the wet ingredients into the dry and mix until a smooth batter.
Step 6- Stir in the Marmite.

Step 7- Carefully heat up your waffle iron and grease with oil, an oil spray or vegan butter.

Step 8- Pour around 3 tablespoons worth of batter onto your waffle iron and cook until golden brown.
Repeat for all of the batter until you have a stack of yummy waffles.
Keep warm under a tea towel while you make the other waffles.
