Blackberry & apple crumble recipe

Vegan, gluten-free, wheat-free, quick & easy.

Who fancies a filling and warming crumble, filled with juicy blackberries, apples with a delicious gluten-free crumble topping? Sounds delicious, doesn't it?! 
Crumble is ever so quick an easy to make, versatile and great to serve for a tasty dessert.

I'm sure everyone will go crazy for this dessert. 
Why not serve it up with some dairy-free ice cream, vegan cream, coconut whip, dairy-free custard, caramel drizzle... the variety is endless!

Preparation- 10 minutes
Baking time- 40-60 minutes
Serves- 8

Ingredients for the crumble
165g of dairy-free butter
-60g of light brown sugar
-170g of plain flour (I use gluten-free)

Ingredients for the filling
-250g of blackberries
-350g of apples
-A squeeze of lemon juice
-100g of golden caster sugar
-1/4 teaspoon of ground cinnamon
-3 & 1/2 teaspoons of corn flour/starch

To make the crumble
Step 1- In a large mixing bowl, cream the butter and sugar together until creamy.
I use my stand mixer with a balloon whisk attachment.
Step 2- Add in the flour and with clean hands, rub everything together with your fingertips until crumb-like.

Set aside.

To make the filling 
Step 1- Preheat the oven to 190 degrees c.

Step 2- Wash, and slice the apples & blackberries and place them into a large mixing bowl.

Step 3- Add in the lemon juice, golden caster sugar, ground cinnamon and corn flour/starch.
Mix to combine until everything is coated.

Step 4- Place the mixture into a pie dish and sprinkle over the crumble.

Step 5- Carefully pop the dish into the oven and allow to bake for 40-60 minutes or until the top begins to turn golden brown.

Step 6- Serve hot or cold with dairy-free ice-cream or custard!
You can even enjoy this crumble with some fresh berries, for extra flavour & added colour.

Best enjoyed, day of making.
Store in the fridge.
