Pink Protein Packed FlapJacks recipe
Healthy Vegan Flapjacks, packed with Protein,Strawberries, Lime, coconut and Spice..
What more would you want!
I wanted to make a Healthy(ish) Vegan Dessert or Breakfast which was packed full of Protein. Recently, i've been wanting to eat a lot of Protein rich foods for my body as i feel i have been lacking in it.
I love FlapJacks(as you may have known from my previous FlapJack Recipe) and i wanted to incorporate some fruit, citrus flavours as well as Spice from Ginger and Cinnamon ( which are my favourite too)
This is also low in sugar and fat, you wouldn't have thought so by the taste! :)
They are very rich and flavourful. I don't feel as guilty tucking into one of these, because i know its full of Nutrition.
So why not give it a go, you won't be disappointed!
This also is a great and easy recipe for young children to try out!
While you have a little read of the recipe, i'll scoot off and enjoy one i made earlier.....
Prep time- 15 minutes
Cooking time- 30-40 minutes
Ingredients-
-400grams of Oats (or you could use Gluten-free Oats for Coeliacs)
-4 large Bananas ( Chopped Roughly)
-1 Teaspoon of Fairtrade Ground Ginger
-1 Lime (Squeezed)
-Good Handful of Strawberries (Mashed)
-1 Tablespoon of Ground Almonds
-1 Teaspoon of Fairtrade Ground Ginger
-1 Lime (Squeezed)
-Good Handful of Strawberries (Mashed)
-1 Tablespoon of Ground Almonds
-1 1/2 Tablespoons of Sunflower Seeds
-3 Tablespoons of Honey
-3 Tablespoons of Honey
-2 Teaspoons of Golden Linseed
-1 Tablespoon of Ground Cinnamon
-2 Teaspoons of Chia seeds
-3 1/2 Tablespoons of Unsweetened Desiccated Coconut
-2 Tablespoons of Pea Protein ( Or you could use any Protein Powder, i just have this one)
Yogurt Drizzle-
-2 Tablespoons of Dairy-free Yogurt
-4 Tables-spoons of Ice sugar
-1/4 Teaspoon of Vanilla Extract
-1 Tablespoon of Lime (Juice)
Lets get baking.....
Directions-
Step 1- Pre-heat your Oven to 170 Degrees and get your FlapJack pan washed and ready.
Step 2- Clean your work area and weigh out all of your Ingredients placing them in to separate bowls or plates,
which makes it a lot easier to grab and add in to the mixture ( if your not really organised like me :P )
Step 3- Roughly Chop up the Bananas.
Step 4- Put the chopped Bananas into a Large Mixing Bowl and slowly add in the Honey, Ground Almonds, Ground Ginger, Ground Cinnamon, Golden Linseed, Chia & Sunflower seeds, Lime Juice, Pea Protein and mashed Strawberries.
Smells good doesn't it! :)
Step 5- Mash them all together until they are a smooth consistency. you can use a food processor if you have one.
Step 6- Next Pour your Oats and Desiccated Coconut in to the Mixture and mix together until coated. Watch the Oats turn a light Pink ^.^
Step 7- Scoop your mixture into a Large baking Tray, making sure you get right in to the edges. Smooth with a spoon for a flat surface.
Step 8- Place the tray in the Oven for 30-35 minutes, and wait for the delightful smell to fill your home. Keep checking your FlapJack as the edges can easily burn if left un-checked.
Step 9- When the FlapJack has turned a scrumptious golden brown, its time to take it out of the Oven! Cut around the edges with a sharpe knife and cut in to small pieces while still in the tray. but hold on... the sad part is you will have to let it cool for about 10 minutes before you can get your hands on a piece or you will burn your fingers and mouth, which we do not want! :)
While the Flapjacks cool, its time to make the Easy yummy Yogurt Drizzle-
Step 1- In a small bowl, Scoop 2 Tablespoons of Dairy-free Yogurt( I used Alpro Soya) along with 4 Tablespoons of Iceing Sugar ( this gives it Sweetness but also make its thicker) and the 1/4 Teaspoon of Vanilla Extract.
Step 2- Mix up and Squeeze in half a Lime! It will Taste mouth watering, i promise :)
Step 3- Put into the Fridge, and leave to cool for 20 minutes!
Step 10- When the Flapjacks have fully cooled, scoop them out of the tray and place sparsely on a Serving plate!
Decorate with the Yogurt Drizzle,Strawberries, or Squeeze Lemon/Lime over the top for Moisture!
Go all out and serve with a dollop of Dairy-free Ice-Cream or Soya Cream.
Enjoy for a protein packed Breakfast with a dollop of Yogurt to keep you going all day!
