White Chocolate & Hazelnut Vegan Cookies
Vegan, Dairy-free, Wheat-free, Gluten-free, Egg-free
With this dreary british weather we are having atm, made me want to bake. They taste sooo good!
This Recipe was a request that i got on Instagram , and i was very happy to make these are try them ( as i love White Chocolate & Hazelnuts)
I followed my other HomemadeCookie Recipe for this,

Preparation time- 5-10 mins
Cooking Time- 6-10 mins( keep checking so they don't burn)
Cooling time- Just get stuck in while there warm :)

Ingredients-
-128grams of Almond Flour
-197grams of Plain flour
( Or you could just use 325grams of plain flour)
-1/2 Teaspoon of Bicarbonate of Soda
-1/2 Teaspoon of Salt
-100grams of Honey ( or Agave Syrup)
-1 Teaspoon of Vanilla Extract
-125grams of Grapeseed Oil
-Choices Dairy-free White Chocolate (I actually couldn't find any big Dairy-free White Chocolate bars, i actually picked up 2 Moo Free White Chocolate Easter Bunnies from the Free From section in my local Supermarket...worked absolutely fine)
But if you can buy a big Dairy-free White Chocolate bar, go for it :)
-4 tablespoons of Crushed Hazlenuts ( I used Whitworths Chopped Roasted Hazelnuts ( they are Sweet & perfect for incorporating into yummy Cookies)
Lets get Baking...
Step 1- Get all of your ingredients out, and measure.
Step 2- In a Large mixing bowl, combine the Flour, Bicarbonate of soda and Salt until mixed.
Step 3- Next, in a separate mixing bowl,combine the wet ingredients, the Oil, Vanilla extract honey or Agave syrup whichever you have.
Step 4- Pour the wet mixture into the dry and mix up until light and crumbly.

Step 5- In the first bowl, add in the Grated or broken up White chocolate & Hazlenut until they are equally distributed within the mix.
Step 6- With your clean hands, scoop up some of the mixture and form into small balls and firmly press on to your baking paper ( making sure that you leave a small gap in between the cookies, because they do puff up.
As Easter is coming up, i used some Easter cookie Cutters on a few of the Cookies.Step 7- Put the Tray full of delightful Cookies in the Oven at 180 Degrees, Gas Mark 4 and bake for 6 minutes.
Step 8- After 6 minutes, check the Cookies, and bake for an extra 4 minutes, until your Kitchen smells like a Bakery & cookies are a light, golden brown.
Step 9- With an Oven Mitt, take the tray out of the oven and place on a Worktop.
Immediately scoop up the Cookies and place on a Cooking rack to cool.

Serve them warm with the gooey melted chocolate, or be patient (un-like me) and wait until they have crisped and are cool :)
This recipe is quick, easy and extremely delicious! These will go down a TREAT at birthdays, Easter or any other reason to eat some sweet treats!!
They are especially nice with a Glass of Cold Almond Milk...pure bliss!
