Banana Bread Muffins (Veganuary entry)

Vegan, Dairy-free, Egg-free, Wheat-free, Gluten-free, Guilt-free.

This Yummy Recipe is an entry for the Veganuary #Cooksnapwin Competition!
I wanted to enter this amazing Competition as its a chance to share my creations, support Veganuary & to hopefully win an amazing Prize bundle filled with goodies from some of my favourite brands!

This Recipe was taken from the Veganuary website, but i have made a few alterations.
The Muffins are low Sugar as i decided to cut down on the amount of Maple Syrup and Chocolate.
The Sweetness comes from the Ripe Bananas & Dried Cherries.
The Chocolate adds a lovely texture and compliments the overall taste of the Spices with the Banana and Cherries.

Ingredients-
-120grams of Gluten-free Oats
-1/2 Tablespoons of Maple Syrup
-4 Medium Bananas (or 3 Large)
-1 Teaspoon of Cinnamon
-1/2 Teaspoon of Ground Ginger
-1 Teaspoon of Ground Nugmeg
-1 Teaspoon of Baking Power
-30grams Dried Cherries
-Dairy-free Dark Chocolate (I used Kinnerton Luxury Dark)

Lets get Baking....

Step 1- Pre-heat the oven to 180Degrees, Gas Mark 4 and line a Muffin Tin with Cases.


Step 2- Pour the Oats into a Food Processor and whizz up until they are finely ground, like Flour

Step 3- In a Large Bowl, mash the Bananas then add in the Maple Syrup, Ground Nutmeg, Ground Ginger, Cinnamon, Baking Powder, Dried Cherries & the Ground Oats. Mix together until combined.

Step 3- Carefully fill your Muffin Cases with the mixture.
To make them gooey and even more delicious, press a chunk of Chocolate into the Middle, then cover with more mixture.

Step 4- Place the Tray into the Oven and Bake for 20-24 minutes until golden brown.
Once fully cooked, place the Muffins onto a Cooling rack to...cool :D
Enjoy for Breakfast or as a Protein Snack before the Gym, a treat with a Cup of Tea or just as a nice homemade nibble!
