Avocado & Quinoa salad recipe

Avocado is one of my favourite foods along with lime and garlic....yum!
I have been trying to up my protein recently and quinoa is considered to be a complete protein which is amazing. It's also high in vitamins and nutrients, great for a vegan diet!

This salad is absolutely divine, fresh and extremely tasty!

It's a salad that can be whipped up fast and enjoyed whenever as its healthy & guilt-free.
You can always take it out and about with you or for picnics.
Preparation- 20 minutes
Cooking time- Around 15 minutes

Ingredients
-1/2 litre (500ml) of water
-230g quinoa
-1/2 lime (juice)
-2 ripe avocado (cubed)
-1 large garlic clove (crushed)
-Handful of cherry tomatoes (halved)
-4 jalapeno peppers (finely sliced)
-Pinch of pepper
-Pinch of chilli flakes
-Corriander & salad leaves (to garnish)
-Pinch of chilli flakes
-Corriander & salad leaves (to garnish)

Step 1- Wash the quinoa thoroughly.
Step 2- Add the water into a large saucepan and bring to the boil.
Step 3- Add in the quinoa and bring to the boil again. Stir often to prevent sticking. 
Step 4- Reduce heat to low, cover and simmer until tender and most of the liquid has been absorbed, 15 to 20 minutes. Fluff with a fork.
Step 5- Cube the avocado and place into a bowl and toss with garlic and lime juice.
Step 6- Serve the quinoa and add on the avocado mix along with some chopped tomatoes, pepper, chilli flakes, coriander and a dash more lime juice.
Serve hot or cold.
