Pink Pitaya pancakes recipe
Vegan, gluten-free, wheat-free, naturally pink.
Jazz up your breakfast with these naturally pink and flavourful pancakes, with dragonfruit, coconut whip and a pink pitaya yoghurt drizzle.
They're quick & easy to make, 100% vegan and gluten-free! A bright, fun and colourful way to start the day!
I coloured my pancakes using Pitaya powder which is a great way of adding colour to food without the use of any un-natural, artificial colours and dyes.
I've been loving using plant/fruit powders to add natural colours to food.
Pitaya powder has a deep, rich purple colour which looks beautiful when whipped into the pancake batter, it turns galaxy! Who wouldn't like that?!
If you are reading this and have no idea what pitaya is, pitaya is basically another name for dragonfruit. Dragonfruit/pitaya is the fruit which grows on the cactus plant.
They're getting more and more common which is amazing as I love them!
Pitaya powder is loaded with nutrients and vitamins including Vitamins C, B3, B2, and B1.
It's also full of Calcium, Magnesium, Omega 3 and Iron.
Dragon fruits are rich in dietary fibre which plays an important role in maintaining the health of the digestive system.

These pancakes are light, fluffy, delicious and almost too pretty to eat....I did say almost- haha!
I actually think these are my favourite pancakes I have made so far!

Preparation- 5 minutes
Cooking time- 3-5 minutes
Makes- Around 8-10 pancakes

Ingredients
-250g of plain flour (I use gluten-free)
-1 & 1/2 tablespoons of baking powder
-2 tablespoons of golden caster sugar
-1/4 teaspoon of salt
-2 teaspoons of Pitaya powder
-2 teaspoons of Pitaya powder
-300ml almond milk (I use unsweetened)
-3 tablespoons of oil (I use light olive oil)

Step 1- Add the flour, baking powder, sugar, salt and pitaya powder into a bowl and mix.
Step 2- Pour in the dairy-free milk and oil and combine until smooth.
Set aside for 5 minutes.
Step 4- Spoon the batter into the pan, about 2 tablespoons at a time.
Step 5- Once both sides are golden in colour, serve.
I served my pancakes stacked, with coconut cream whip, and topped with fresh dragon fruit.
I made a pink drizzle by whipping some pitaya powder into dairy-free vanilla yoghurt.
I also washed them down with my favourite cactus water from True Nopal!
