Carrot Smoothie & Chocolate Nests with Almond Eggs
Easter is coming up, so why not make loads of Easter treats (i am)..
If you didn't know, Niomi Smart is a Beauty, Fashion, Health & Fittness Youtuber & Blogger!
Niomi has inspired me, with her delicious recipe Videos along with finding Natural Beauty Products!
Her recent video, she made some lovely Easter treats which include Homemade Chocolate, Carrot Smoothie and Egg Nests!
I will be making the Carrot Smoothie and Egg Nests. As she used Dairymilk, i will be using Dairy-free Chocolate so they suit my Diet :)

Here we go.....
Carrot Smoothie-
Orange Bottom
-1 Orange
-1 Large Carrot
-A Squeeze of Lemon
-1/2 a cup of Coconut Water
Green top
-1/2 a Avocado
-1 Chilled Banana
-Large Handful of Spinach
-1/4 cup of Almond Milk
-Blender
Step 1- Wash and prepare your Fruit and Veg!
Step 2- Pop all of the 'Orange' Ingredients into your Blender, whizz up and pour into your Favourite glass.
Step 3- Whizz up all of the Green ingredients until smooth, Spoon out and dollop ontop. Finish off with a nice straw and Carrot stalk.
This smoothie is perfect in the morning to give you a Boost! Its very tasty, and flavourful.
As its me, i would also sprinkle some Black Chia seeds on-top for added Protein.

Easter (Dairy-free) Nests!
Ingredients-
-3 Wholegrain Puffed rice ( I used Kallo which i found at Sainsburys in the Free From section, but you could always use Rice crispies)
-Dairy-free Chocolate ( I used 2 large original Moo free Bars)
-HoneyComb pieces ( you can find these in the baking section at a Supermarket)
For the Eggs
-1/2 a Cup of Oats (I used Gluten-free)
-1 Tablespoon of Coconut Oil
-1/2 a Cup of Ground Almonds
-1 Tablespoon of Almond Butter
-2 Tablespoons of Maple Syrup
Step 1- Get a Sauce pan out and full it half way, then pop a bowl ontop ( this is to make a Banmarie). Make sure its on a low heat, we don't want to burn anything!
Step 2- Break up the Chocolate and place it into the bowl, making sure you use a Wooden spoon to Stir. Wait until its melted.
(try not to lick the spoon...its difficult but we need all of the Chocolate for the Nests)
Step 3- Once the Chocolate is melted, carefully take the bowl off the Heat and pour the Chocolate into a Large Mixing Bowl, the pour in your Rice Crispies until its all combined and Covered in the tempting Chocolate!
Niomi didn't do this, but i actually added in some HoneyComb Pieces, just to add more flavour and Crunch into the Nests! yum
Step 4- Line a Muffin tin with Cases, and carefully spoon in your Mixture. Make sure you make a well in the middle of the nest...thats where your lovely little Cookie dough Eggs will be :)
Once you have made the Nest's, pop them in the Fridge for about 30-50 minutes to completely set!
To make the cute little Eggs-
Step 1- Get out a Sauce Pan, and spoon in 2 Tablespoons of Coconut oil. It only takes about a minute to melt.
Step 2- In a Mixing Bowl, mix together the Maple Syrup, Almond Butter and the Melted Coconut Oil.
Step 3- In a Blender, whizz up 1/2 a cup of Oats ( this just powders the Oats making them smooth so you don't have hard Oat chunks in the Eggs)
Step 4- Pour the Powdered Oats and Ground Almonds into the Mixture and mix until Smooth.
I added in Poppy seeds (this is optional)
Step 5- This is where it gets messy!
With your hands, grab a small amount of the mixture, and roll into a Egg shape! ( it gets easier the more and more you do it)
Step 6- When you have used up all of the mixture, pop the Eggs into the Fridge with the Nests, and leave for 10 more minutes.
Step 7- When the Nests & Eggs are set, take them out of the Fridge and make them look super cute in a Easter Basket or Plate...serve up and Enjoy!!! :)
