Vegan Chocolate Cupcakes with a Hidden Oreo and Vanilla Oreo Frosting!
I have decided to Make these Chocolate & Oreo Cupcakes as i recently found out..
Oreos are a Wafer Biscuit with a Sweet cream filling centre if you didn't know that already! They are simply Delicious!
These Cupcakes are extra Special as they have a hidden Oreo in the Cake part...

Ingredients-
-1 Pack of Original Oreo's
-200grams of Plain Flour ( i used Gluten-free)
-200grams of Caster Sugar
-4 Tablespoons of Cocoa Powder
-1/2 a Teaspoons of Salt
-1 Teaspoon of Bicarbonate of Soda
-4 Tablespoons of Vegetable Oil
-1 1/2 Teaspoons of Vanilla Extract
-250ml of Filtered Water
For the Frosting-
-1 Teaspoon of Vanilla Extract
-1 1/2 Tablespoons of Dairy-free Milk ( I used Unsweetened Almond Milk)
-300-400grams of Icing Sugar( just keep adding it to the mixture until it resembles a light fluffy texture)
-Crushed Oreos ( I Used about 6 Oreos)
Lets get Baking.....
Step 1- Get out your Utensils and Ingredients and Pre-heat your Oven to 180 Degrees.
Step 2- Weigh out your Ingredients and in a Large mixing bowl, Sieve in the Flour, Caster Sugar, Cocoa Powder, Salt and Bicarbonate of Soda. Mix up until smooth.
Step 3- Pour in the the Oil, Vanilla Extract and Water, mix until a dark brown Liquidy Texture.
Step 4- Line a Cupcake tin with Cases ( i used Muffin cases) and in each Cupcake Case, drop in 1 Oreo, it just makes it more exiting.
Step 5- Start to cover the Oreos with the Mixture, and pour in up to half of the Case.
Step 6- When all of the Cases are filled, pop the Tray in the Oven for 20-25 Minutes. Make sure you check them after 20-25 minutes with a Knife or Skewer, stick the Knife or Skewer into the Cake, it should come out clean, if it doesn't they need a bit more time to cook.
While the Cakes are in the oven its time to make the Oreo Frosting!

While the Cakes are in the oven its time to make the Oreo Frosting!
To Crush the Oreos- You can either Blend them up in a Food Blender or processor, or you can do what i did, put come Oreos in a Small Food Bag, wrap it up in a Tea Towl and bash them with a Rolling Pin :) The smell of Bended Oreos is soooo good!
When the Forsting is thick, and looks a Cookies & cream, pop it in the Fridge to harden while you wait for the Cupcakes.
Step 7- Get the Cupcakes out of the oven, they should be springy to the touch!
Leave them to cool on a wire rack for 10 minutes before decorating with the Frosting or the Frosting will melt.
You can use a Piping bag, but i like the Rustic look and just dolloped it on and spread it out until it looked good and moorish!!
Were finished! :)
These cupcakes are very rich, they would be great served with some Dairy-free Icecream!
